Why sources disagree
Coconut flour is fine and packs easily, so a spooned cup and a scooped cup can differ, which helps explain the 16 g gap. Bob's Red Mill's figure comes from a 2-tablespoon label serving, and multiplying a small serving up to a cup also magnifies its rounding. Coconut flour soaks up far more liquid than wheat flour, so do not swap it cup for cup in a recipe written for all-purpose flour.

How to measure coconut flour accurately
- Whisk out lumps, then spoon the flour into the cup instead of scooping.
- Use coconut flour only in recipes written for it, since it absorbs much more liquid than wheat flour.
- Weigh on a digital scale when you can, since cup scoops vary from cook to cook.
