How to scale a recipe up or down without ruining it

The short answer

Multiply ingredients by servings-wanted ÷ servings-listed, but treat that number as a starting point, not a finish line — pan size, cooking time, salt, and leaveners need separate, smaller adjustments.

The arithmetic, and where it stops being enough

The multiplier is servings you want divided by servings the recipe makes. A recipe for 4 that you want to feed 6 gets multiplied by 1.5. A recipe for 8 that you’re making for 2 gets multiplied by 0.25. Apply that number to every ingredient and you have a mathematically correct list — and, for a lot of dishes, a genuinely usable one. Soups, stews, marinades, most stovetop sauces: scale the ingredients, adjust the pot, you’re basically done.

Where it breaks is anything with a pan that has walls, a chemical leavener, or a reduction step. The multiplier is still where you start. It’s just not where you stop.

Why the rest doesn’t scale in a straight line

Pan size and depth. Volume scales with the cube of a pan’s dimensions; heat only enters through the surface. Double a cake batter into the same tin and you get a pan overfilled past the two-thirds line it needs for rise, a center that takes much longer to reach temperature than the edges, and a top that browns before the middle finishes.
